How I Feel About This Hot Oil Noodles
When hot oil splashes onto all the seasonings and knife-cut noodles, I know I’m experiencing one of the best Chinese noodles ever. Known as Oil-Splashed Noodles, this hot oil noodles dish takes only 15 minutes to prepare.

Story Behind the Chinese Hot Oil Noodles
It is said that Oil-Splashed Noodles date back 3,000 years and are a typical dish from Shanxi province. We use knife-cut noodles for the dish.This dish features noodles that are shaved directly from a block of dough into boiling water using a knife, resulting in broad, thick noodles with a unique texture. It is a traditional specialty from the Shanxi province of China. You can buy these noodles from the market to save time, which is how most Chinese people prepare the noodles.

Cooking Tips
- You may use any leafy green to replace Shanghai bok choy. I use lettuce instead.
- To adjust the salty of hot oil Noodles, you may add soy sauce or salt.
- Be careful when heating the oil and don't mix any water to avoid splash. Make sure the bowl is thick enough to hold hot oil noodles.

Ingredients to Make Hot Oil Noodles

Food
Knife-cut noodles — 100g/3.5oz
Shanghai bok choy — 1 head
Green Onion — half piece
Garlic — 5 cloves
Chili/Dried Chili — 1 piece
Seasonings
Oil — 3 tablespoons
Light Soy sauce — 2 tablespoon
Chinese black vinegar — 1 tablespoon
Sesame oil — 1/2 tablespoon
Fragrant Sesame oil — 1/2 tablespoon
Chili Powder — 2 tablespoons
How to Make Chinese Hot Oil Noodles
Preparation
1. Wash and cut green onion, chili and garlic, leafy green and leave them aside


2. Add 2 tbsps of soy sauce, 1 tbsp of Chinese black vinegar, 1/2 tbsp of sesame oil and 1/2 tbsp of fragrant sesame oil into a bowl.

Cooking
1. Add knife-cut noodles into the boiling water and cook for 6-7 mins. Drain the noodles and move them to the bowl with sauces and stir.

2. Add leafy green to the same boiling water and cook for 20 seconds. Then put them on the noodles.

3. Add prepared green onion, chili, garlic and 2 tbsps of chili powder onto the noodles.

4. Heat the 3 tbsp of oil to super hot and carefully pour the hot oil over the noodles which would immediately boil all the seasonings. That's how the Oil-Splashed Noodles got its name. Now you have these wonderful Chinese Hot Oil Noodles. Ready to eat now. I do like this noodles.
