How I Feel About This Scallion Lard Noodles
The other day, I made pork lard, and today I’m excited to cook with it. I’ve decided on noodles because they’re quick and easy—just about 10 minutes to prepare. I also have some knife-cut noodles on hand. Though this dish doesn’t contain meat, it’s packed with rich pork flavor from the lard, and the scallions make it even more aromatic.I’m inspired by scallion oil noodles, another traditional noodles from Shanghai, which I’ll introduce on a later page. My dad, a big fan of noodles, really enjoys this dish. While it’s not a classic Chinese noodle recipe, it’s definitely worth trying!

How to Cook Scallion Lard Noodles
Preparation
1. Cut 5 stalks of scallions into 5 cm pieces, and 1 stalk into 5 mm pieces.
2. Cook 100g of knife-cut noodles.
Cooking
1. Add lard to a wok and let it melt. Once melted, turn the heat down, add the scallions and fry until they turn golden.

2. Add 2 tablespoons of soy sauce to the wok and let it simmer for a few seconds.

3. Pour the scallion-lard sauce over the cooked noodles. Top with the fried scallions, the finely chopped scallions (5 mm), and white sesame seeds. It’s ready! Stir and enjoy.
