Introduction
Yibin Suì Mì Yá Cài (宜宾碎米芽菜) is a renowned traditional preserved vegetable from Yibin, a city in Sichuan Province, China. It is a flavorful and umami-packed ingredient that has become a staple in Sichuan cuisine.
Made from the tender stems and leaves of Brassica juncea, also known as Sichuan mustard greens. It has a soft yet slightly chewy texture and a deep umami flavor that combines sweet, salty, and aromatic notes, with a hint of Sichuan pepper spiciness.
How to Make
1. The vegetable stems and leaves are chopped finely into rice-grain-sized pieces (hence the name “碎米,” which means “broken rice”).
2. They are then salted, sun-dried, fermented, and stir-fried with oil, sugar, and spices to create a fragrant, savory, and slightly sweet preserved vegetable.
History
Yibin Suì Mì Yá Cài is a time-honored product with a history of over 1,000 years, originating in Sichuan’s fertile lands, known for mustard greens. The process of fermentation and stir-frying ensures its complex aroma and balanced taste, which embodies the essence of Sichuan cuisine. Its intense flavor makes it a perfect umami booster for a wide range of dishes.
It is most famously used as a topping for Sichuan-style noodles, especially in Dan Dan Noodles (担担面) and Yibin Burning Noodles (宜宾燃面). The sui mi ya cai adds a burst of flavor that complements the spicy chili oil and savory sauces.
