Introduction
“水代法” (Shui Dai Fa) refers to a traditional water substitution method used in the production of sesame oil, particularly in Chinese cuisine. This technique is a key part of making high-quality fragrant sesame oil and is designed to extract the maximum flavor and aroma from sesame seeds. Here’s how it works:
1. Grinding and Mixing with Water: Roasted sesame seeds are ground into a paste, and water is added during the process. This helps separate the oil from the sesame solids.
2. Oil Separation: Once the paste is thoroughly mixed, the mixture is allowed to rest. Over time, the oil naturally separates from the water and solids, floating to the top.
3. Extraction: The oil is carefully skimmed off, resulting in a pure, fragrant sesame oil with minimal impurities.
This traditional method is valued because it preserves the sesame seeds’ rich, nutty aroma and flavor without the use of chemicals or excessive heat, which can damage the oil’s quality. The “Shui Dai Fa” method is often used to produce artisan sesame oils prized for their authentic taste and aroma.
